Ingredientes:
1 Pound of Eye of Round
1 Red Onion, Finely Chopped
3 Radishes, Finely Chopped
1/2 teaspoon of ground pepper
1/2 cup of Mint leaves, Finely Chopped
The Juice of 2 to 3 limes
Salt to Taste
How to:
Cook the Eye of Round in 3 cups of water ( I prefer to cook in a pressure cooker or slow cooker so that it's extremely tender and easy to shred)
Let the beef cool down, then shred finely or shred in a food processer.
Combine beef and remaining ingredients and mix well.
Orly Taitz and the birthers are full of it. Thank you President Obama for finally putting an end to this made up controversy. Birthers are thinly disguised racists. Shame on you. I thought we, the USA, were better than that.
This year my husband and I decided to give up meat for lent. We ate meat almost every day so I was concerned about making the transition. It won't be easy.
Here is a list of what we ate.
Day One (Ash Wednesday):
Breakfast: Oatmeal for breakfast.
Lunch: Vegetarian burrito bowl for Chipotle for
Dinner: Grilled Tuna steaks with brown and wild rice for dinner.
Day Two (Thursday 3/10):
Breakfast: Apple and breakfast bar
Lunch: Trader Joe's Mideast Feast (picture to the left)
Dinner: Trader Joe's Spinach and Cheese Filo Pie
Day Three (Friday 3/11):
Breakfast: Half a banana nut muffin with coffee
Lunch: Le Madeliene's Baked Fish with wild rice
Dinner: Shrimp Dumplings
Day Four (Saturday 3/12):
Breakfast: Baked plantain with sour cream and re-fried beans
Lunch: Dim Sum which consisted mostly of shrimp dumplings and vegetables
Dinner: Red peppers stuffed with squash and mushrooms with brown rice and wild rice mix.
Day Five (Sunday 3/13):
Breakfast: Fried Plantains with sour cream and re-fried beans with an egg
Lunch: Homemade whole wheat flour pizza with spinach, onions, peppers and vegetarian sausage
Dinner: Leftover pizza and some cookies.
Day Six (Monday 3/14):
Breakfast: Half a muffin with coffee
Lunch: Leftover pizza from Sunday's dinner. I made two pizzas on Sunday so I had a lot of leftovers.
Dinner: Broccoli slaw with tofu with oyster sauce. This meal was my own invention. I will try to remember to post the recipe.
Day Seven (Tuesday 3/15):
Breakfast: Apple danish with coffee
Lunch: Chipotle Vegetarian Veggie Bowl.
Dinner: Eggplant with noodles and tofu with a black bean sauce.

I'm certain that my husband and his friends tried to recreate this movie when they went to Las Vegas last year. There is certainly going to be a whole new bunch of guys trying to recreate this new movie. Enjoy.
My office has been plagued by the most awful flu/cold this year. This week it has been my turn to deal with this malady. A good friend recommended I make myself a hot toddy. Initially I did not know how to make one. I asked my friends on facebook if they new of a good recipe. One person replied. I liked her recipe but I felt it needed more. So I made my own modifications and additions. Here is what I came up with. It helped me sleep all night long and I honestly felt better the next morning. I hope it helps you too.
First make the tea....
1 cup of water
2 slices of fresh ginger slices
1 lemon wedge
1 stick of cinnamon bark
Place the all the ingredients in a small saucepan bring to a boil. You will know it's ready when you smell the cinnamon, ginger, and lemon coming from the saucepan.
Now to put the hot toddy together.
1 shot of bourbon or whiskey
1-2 tablespoons of honey
1/2 cup of the tea you just made
Place the strained tea, honey and bourbon in a mug. Stir well and enjoy.
I like to put honey in the leftover tea and enjoy as a wonderfully medicinal chaser to the hot toddy.

Believe it or not someone actually printed this headline "Republicans Turned Off By The Size Of Obama's Package". I thought it couldn't be a real headline. I searched for the actual article and found it. The author is Tom Brandt, the Opinions Editor for The Echo. Here is the first sentence, notice the words beating, vigor and rod:
"Republicans are not sparing the rod when it comes to beating up on President Obama’s economic stimulus package, but it’s clear they are unable to raise their membership to withstand the newly found vigor of his congressional muscle."
Another day another vehicle recall. Yesterday GM announced a recall of the 2 models including the Chevy Cobalt. Today Nissan announced a recall that includes almost 54,000 vehicles due to faulty brake pedals and faulty fuel gauges.
The cars affected by the faulty brake pedals are: Titan pickup trucks, the Armada and Infiniti QX56 SUVs and Quest minivans built between 2008 and 2010.
The cars affected by the faulty fuel gauges are: Titan, Armada and Infiniti QX56 built from 2005 to 2008, and the Frontier, Pathfinder and Xterra produced between January and March 2006 and between October 2007 and January 2008.
These models are affected by both problems, the faulty fuel gauge and faulty brake pedal, 2008 models of the Titan, Armada and Infiniti QX56.
If you have any of these vehicles I suggest you contact your Nissan dealer right away.
The body of Chelsea King was found yesterday around 1:00 pm Tuesday. Chelsea King's body was found near Lake Hodges north of San Diego. Chelsea King's friends were scheduled to have a vigil of hope. The vigil turned into a memorial. Rest in peace Chelsea King. My thoughts are with your family and friends who are devastated by your death.
A man named John Albert Gardner was arrested on Sunday. His DNA was found on a piece of Chelsea King's clothes that was found by the water. He will be arraigned today. He is facing forcible rape charges and hopefully the first degree murder of Chelsea King.

Seaworld resumed the, Believe: The Spectacular Shamu Show this weekend. I think that Dawn Brancheau would have been happy that the show will go on. The show ended with a photo montage tribute to Dawn Brancheau
I know what I will be watching tonight. Watching the USA win the Gold in Vancouver. USA! USA! I would also like to congratulate the men's bobsledding team for their Gold medal.
